Overview

In our Italian kitchens the Pizzaiolo is a crucial role. A great pizza is a work of art and requires passion, knowledge, and expertise. Our pizzaioli must be able to produce an authentic Italian pie with a high level of consistency while keeping up with the fast pace of our service.

The scope of the role and responsibilities are as follows:

  • Prepare pizzas to order as directed by Chef
    • Follow recipes accurately as outlined by Chef
    • Coordinate timing of dish completion with other cooks, as directed by Chef
    • Accommodate special requests and dietary restrictions
  • Station Prep and Set Up
    • Ensure all supplies needed for service ready for use
    • Prior to service, prep pizza ingredients.
    • Prepare Pizza dough to Gusto 54 standard
  • Perform duties in accordance with Ontario Health and Safety Standards
    • Sanitize workstations
    • Regular hand washing
    • Mark and date all stored food
    • Ensure dishes are prepared to accurate temperature
  • Maintain Pristine workstation
    • Work clean and organized
    • Disposal of waste
    • Sweep and mop after service
    • Clean all cooking surfaces
    • Store or dispose of all unused items

Preference will be given to candidates with:

  • Minimum 2 Years experience on pizza station
  • Basic knife skills
  • Time management skills
  • Thorough understanding of safe food handling
  • Aloha & Kitchen Display Systems experience
  • The mentality of creating a fun and entrepreneurial environment

Reports to: Chef de Cuisine, Sous Chef, General Manager
