Caprese: Your Staple Spring Salad
Spring has arrived. Sunshine. Check. Patio. Check. Fresh caprese salad? Double check.
Whether you’re hosting your friends for a backyard BBQ or preparing a home-cooked meal for your family, there’s no fresher and tastier salad than a classic caprese. A few simple ingredients, a few quick dices and chops, a quick drizzle of oil…and you have yourself a salad almost too pretty to eat.
WHAT YOU NEED:
Head to your local farmer’s market for an assortment of colourful heirloom tomatoes and cherry tomatoes – the more variation in colour the better. Pick up some fresh basil leaves, mozzarella di bufala, coarse salt and pink peppercorns.
- Slice the tomatoes and mozzarella widthwise. Don’t worry too much about consistency in cutting as asymmetry in shapes will add a more rustic look and feel to the dish.
- Layer the mozzarella and tomato alternating each one as you cover the surface of your serving platter (we recommend serving on a wooden board).
- Chop your fresh basil as fine or as coarse as you like – you may even layer with whole basil leaves.
- Lastly, drizzle the salad with extra virgin olive oil (or, infuse your oil with basil) and lightly sprinkle with some coarse salt and pink peppercorn throughout.
(Note: You can also transform this salad into mini caprese skewers! Simply follow the same steps but instead layer the items onto mini skewers and pass around to your guests).
